Ingredients
- 1/2 cup of Cajun seasoning
- 1 tablespoon of paprika
- 1 tablespoon of pepper
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- 1 teaspoon of dried oregano
- 1 teaspoon of thyme
- Pinch of cayenne pepper
- 4 skinless catfish fillets
- 3/4 teaspoon of kosher salt
- 1 tablespoon of olive oil
- 2 tablespoons of unsalted butter
- 1/4 cup of fresh herb leaves
Directions
- Stir the first 8 ingredients in a bowl together.
- Sprinkle salt over the fish and let sit for 20 minutes.
- Heat a large cast iron skillet over high heat.
- Sprinkle fillets with 1/4 cup of spice mixture and press spice in.
- Add butter to skillet and swirl to coat.
- Cook each fillet for 2-3 minutes per side.
- Remove fish to serving plates.
- Sprinkle with fresh herbs and lemon juice.
