Eggplant Dressing
Ingredients
- Four small OR three medium/large eggplants
- 1 lb. of lean ground meet and 1 lb. of less lean ground meat
- 1/2 onion
- 1/2 bell pepper
- Celery
- Green onion tops
- Garlic cloves
- Salt
- Olive oil
- 1 hot pepper - optional
- White wine - optional
- Italian bread crumbs - optional
- Parmesan cheese - optional
Directions
- Peal and cut eggplants into big chunks.
- Boil eggplants in water with little salt until tender.
- Drain and set eggplants aside.
- Brown meat in olive oil.
- Add chopped onion, bell pepper and celery to meat.
- Cook until onions are clear.
- Add garlic and hot pepper.
- Add seasoning as seen fit (salt, pepper, basil, etc.).
- Add eggplant to the meat mix.
- Add dash of white wine (optional).
- Cook until desired, stirring occasionally.
- Cook longer/add bread crumbs if too liquidlly.
