Ingredients
- 3 3/4 lbs. of okra
- 7 1/2 lbs. of potatoes
- A shin or leg of beef
- 10 quarts of cold water
- Salt
- Pepper
- Cayenne
Directions
- Cut okra into small pieces and skin the potatoes.
- Place the okra, potatoes, and beef into the cold water.
- Boil gently for 7 hours, skimming the water when necessary.
- Season with cayenne or salt and pepper.
