Ingredients
- 5 Irish Potatoes
- 3 Eggs
- 2 tablespoons Vinegar
- 2 tablespoons Parsely
- 1 teaspoon Salt
- 1 teaspoon Pepper
Directions
- Wash, peel, and cute the potatoes into about 3/4 slices.
- Place the potatoes in a large pot and cover with water. Bring to a boil the reduce heat to simmer and cook until the potatoes are tender.
- Drain the potatoes.
- In a small bowl, mix egg yolk, vinegar, parsely, salt, and pepper until slightly loose consistency.
- In a large bowl, combine potatoes, egg whites, and dressing and lightly toss. Add salt and pepper to taste if need be.
- Refrigerate after.
