Directions
- Strain clams of all juices.
- Cut claims until finely diced.
- Toss clams in a bowl with next 6 ingredients.
- Heat butter and lard in a pan on medium high heat.
- Add flour slowly to sauce.
- Stir until consistency of cake batter.
- Drop a spoonful of batter at a time into oil.
- Fry clam fritters until golden brown and rise to the top of oil.
- Let rest for one minute of paper towel when done.
- Serve the clam fritters while hot.
