Ingredients
- 5 eggs
- 2 cups of sugar
- 1 cup of flour
- 1/2 teaspoon of Dixie baking powder
- 1 tablespoon of cold water
- 1 & 1/2 lemons
- 1 cup of hot water
- 1 tablespoon of cornstarch
- 1 tablespoon of butter
Directions
- Mix 4 egg yolks and 1 cup of sugar together.
- Add 1 tablespoon of cold water.
- Sift in the flour and stir thoroughly.
- Beat the egg whites to a stiff dry froth, then add this to the batter.
- Add in the juice of 1/2 of a lemon along with the grated rind.
- Lastly, stir in the baking powder.
- This can be cooked in pie or jelly pans.
- For the filling, combine 1 cup of hot water, 1 tablespoon of cornstarch, 1 cup of sugar, 1 tablespoon of butter, 1 egg, and the juice and grated rind of 1 lemon.
- Cook for a few minutes and spread between each cake like jelly.
