Ingredients
- One whole young chicken
- One head of lettuce
- Salt
- Chervil
- Broth
- 2 tablespoons of Pearl Barely
Directions
- Cut the chicken into four parts and wash well in cold water.
- Place chicken parts into stewpan with one quart of cold water, and a little salt.
- Let chicken boil gently (skim well).
- Add the white heart of the lettuce, and a handful of chervil.
- Boil the broth for 1 hour, then strain it into a bowl.
- Add 2 tablespoons of Pearl Barley to the broth and serve.
