Croquettes Chicken

Ingredients

  • 1 Whole Chicken
  • 1/4 Cup Butter
  • Flour
  • Salt
  • Red Pepper
  • Black Pepper
  • Parsley
  • Small Onion
  • Egg
  • Grated Bread
  • Lard

Directions

  1. Boil chicken until tender.
  2. Let meat cool and chop into fine pieces.
  3. Put liquor in pan with 1/4 cup butter.
  4. Mix in a little flour, salt, red and black pepper, parsley, and a small onion.
  5. Add and mix in the fine minced chicken.  
  6. Shape the mixture while still cold.
  7. Dip the mixture in egg and then into grated bread.
  8. Fry in lard.
