Potato Soup
Ingredients
- Half a dozen fine potatoes
- Small onion
- 3 pints of water
- Very little salt
- Very little cayenne pepper
- A quarter of a pound of fresh butter
- 2 tablespoonfuls or more of sweet cream
Directions
- Pare the potatoes and cut them and the small onion into thin slices.
- Boil them in the water till so soft that you can pulp them through a cullender.
- When returned to the pot add the salt and cayenne pepper.
- Add the fresh butter, divided it into bits, and boil it 10 minutes longer.
- When you put it into the tureen, stir in the sweet cream.
