Ingredients
- 1 Tbsp olive oil
- 3 chicken breasts, cubed
- 4 cloves garlic, minced
- 2 1/2 cups chicken broth
- 2 1/2 cups heavy cream
- 1/2 lb penne pasta, uncooked
- 2 cups parmesan cheese
- 2 cups mozzarella cheese
- 1 handful fresh parsley, chopped
- Salt and pepper to taste
Directions
- Heat oil and cook chicken in a pot.
- Season the chicken with salt and paper to taste.
- Add garlic, and then brown the chicken.
- Add broth, heavy cream, and pasta, and boil.
- Cover the pot and reduce the heat to simmer for 15 to 20 minutes.
- Turn off heat and stir 1 1/2 cups of parmesan cheese.
- Pour half the pasta to a greased baking dish.
- Sprinkle with mozzarella cheese.
- Broil for 10 to 15 minutes, or until the cheese is golden brown.
- Sprinkle with fresh parsley.
