Ingredients
- 1 pound of raw veal
- 1 egg
- 1 cup of butter
- 1 cup of breadcrumbs
- 1/2 pound of fine marble mortar or beef suet
- 1/2 tablespoon of salt
- 1/2 tablespoon of salt
Directions
- Take 1 lb. of raw veal and shred it into fine pieces.
- Add the 1/2 lb. of marble mortar of beef suet to the fine raw veal .
- Season well with salt and pepper.
- Beat again until very fine.
- Shape into the desired size of sweet breads.
- Beat 1 yolk of an egg and dip sweet bread into it (add egg white as well for lighter color of sweet bread).
- Fry the sweet bread in a great deal of butter (2-3 minutes each side.)
- Place bread crumbs on the top of them while frying, and add butter to the top of the sweet bread. Cook until light golden brown.
